Shank meat, or locally known as kenchi, is the boneless version of beef shank. It’s taken from either the front or the back knee joints of the steer. Unlike the bulalo which is a cross-section of the beef leg, kenchi is just the muscle that makes up the meaty parts. While not fatty, it’s a flavorful cut, mostly owing to the fact that this is all dark meat. It is best when braised or simmered until tender and takes less time than the bulalo. It is commonly used for preparing sizzing bulalo steak, crispy beef bulalo flakes, and for beef mami recipe.
