Epic yet Affordalicious Father’s Day Breakfast: 4 Classic Brekkies Recreated

  • June 20, 2015
  • Learning Center, Recipes

Ah, yes, Father’s Day. Finally, another excuse for all dads out there to pig out and not feel guilty about it.

Other than countless pics of Leonardo DiCaprio sporting the DadBod.

But with everybody else running to the malls and restos to make reservations, there’s no way your Dad’s getting the feast he deserves in time for Father’s Day. So, what better way to celebrate it than to cook something up for him yourself? And what better time to do it than in the morning?

They say breakfast is the most important meal of the day. On special occasions like this, this holds more truth because it’s when you can watch your Dad’s reaction as he wakes up to a scrumptious meal—the perfect way to start his day.

Right this way then to 4 epic breakfast recipes sans the cost and the hassle of going to a fancy resto.

Mancakes

This one’s pretty easy and quick to whip up. You just have to buy a package of pancake mix and prepare it according to package instructions. But instead of using water for the batter, substitute it with your Dad’s favorite brand of beer.

Cook up a handful or two of bacon, pat dry, and crumble. Add this to the batter. Cook the batter according to package instructions and serve with some butter and honey or your syrup of choice.

Now, THAT is how you do dad-approved pancakes for breakfast

Spinach-Bacon Frittata

Frittata. Doesn’t it sound fancy? But it’s really just the creamier, yummier version of an omelet.

The only difference is that, after beating the egg, you add some spinach and cooked, chopped bacon into the bowl. Add your choice of cheese into the mixture. Ricotta is good, though you may also use parmesan, mozzarella, or cheddar.

Sprinkle with salt and pepper, then place the mixture into a microwaveable pan. Top with some more cheese then bake in the oven for 10 to 15 minutes, until cheese has melted and egg has cooked through. Best served with steamed or fried rice.

Bread and Hotdog on a Stick

Some people say hotdogs are best eaten on sticks. Some say with bread. We say, why not do both?

Grab some pre-prepared, refrigerated breadstick dough. If you can’t find one in the local groceries, you can always make them yourselves. Simply mix together a cup of water, 3 cups bread flour, 3tbsp. brown sugar, 2 ½ tsp. yeast, a tsp. salt, and ¼ cup oil. Roll out the dough, cut into ¾-inch wide strips, then twist into sticks.

Wrap the dough around uncooked hotdogs. Insert wooden skewers lengthwise through the wrapped hotdogs.
You may either pop the wrapped hotdogs in oven then bake them for 12 to 14 minutes at 350 °F, or fry them in a large pan until the breadsticks are lightly golden brown. Serve by themselves, or with a vegetable relish.

Nothing goes better with hotdogs than sticks. Or bread. Or…both?

Bacon & Egg Cups

Just when you thought there’s nothing better than the bacon-and-eggs breakfast combo, here’s a neat way to re-create this classic fave.
Cut out about 2” circles from 12 pieces of sliced bread and press them onto a muffin pan. (Spray the pan with nonstick spray beforehand.) Cook 12 strips of bacon (not too much so that they won’t crumble easily) and wrap them around the edges of each cup in the pan, just above the pressed bread.

Sprinkle some shredded cheese onto the bread, then crack a medium-sized egg on top of each one. Be careful not to crack the egg yolks.
Place the muffin pan into an oven that has been pre-heated to 325°F and bake for 12 to 15 minutes (You may also do this in a microwave oven), or until eggs are cooked through. Sprinkle with a dash of salt and pepper. Serve while hot.
